The quality and temperature of water used in the brewing of coffee
are two critical elements of a quality program. For best results,
use good water, preferably slightly hard (not softened), purified
by an activated carbon filter installed on the supply line into
the coffee brewer. This filter should be changed a minimum of
once every year and perhaps twice per year if your location is a
high volume site, or if your local water has a high concentration
of minerals, lime, or other particles.
The correct temperature of the water that enters the brew basket
should fall between 196 to 200 degrees Fehrenheit. Holding temperature
for coffee, provided by hot plates, should be 185 degrees Fehrenheit.
Brewer settings should be checked monthly, by using a thermometer.
